Sodium Metabisulfite

Food grade sodium metabisulfite uses as a bleaching agent, preservative, bulking agent, antioxidant, color fixing agent, and freshness preserving agent in food.

There are six leading roles.

1. Helping leavening

Food grade sodium metabisulphite can be a bleaching agent in flours manufacturing foodstuffs such as pastry.

2. Antioxidation

Sodium metabisulfite has good antioxidant and preservation effects on seafood, fruits, vegetables, etc. It has the effect of decomposing oxygen and can effectively inhibit the development of oxidizing enzymes, thus achieving the result of antioxidation and preservation of freshness.

3. Preservation

Adding in juice, canned food, sausage, burger, and other food can extend the shelf life of food and effective sterilization.

4. Reduction of food browning and preservation of freshness

Enzymatic browning is usually found in fresh plant foods, such as fresh fruits and vegetables. Sodium metabisulfite can inhibit the activity of phenolic enzymes and react with carbonyl groups, thus reducing the polymerization reaction of carbonyl compounds. By mixing with other items in food storage, sodium metabisulfite can maintain the color of the original substance for a long time.

5. In wine

Wine usually has sulfur dioxide in its ingredient list, usually formed by adding sodium metabisulfite and potassium called sulfite. It inhibits the growth of yeast and bacteria, thus keeping the wine fresh and extending its shelf life.

6. Puffing

Sodium metabisulfite uses to develop soft and malleable doughs in the cookie industry.
